Ingredients:

  • 200g ramen noodles
  • 500ml chicken broth
  • 100g shiitake mushrooms, sliced
  • 100g bok choy, chopped
  • 2 boiled eggs, halved
  • 50g green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp miso paste
  • 1 tsp sesame oil
  • 1 pinch chili flakes

Kitchen Tools Needed:

  • large pot

  • soup ladle
  • mixing bowl

Instructions:

  • Bring a large pot of water to a boil and cook the ramen noodles according to package instructions until al dente.
  • While the noodles cook, in a separate pot, heat the chicken broth over medium heat.
  • Add the shiitake mushrooms, bok choy, soy sauce, miso paste, and sesame oil to the broth and stir well. Simmer for about 3-4 minutes until the vegetables are tender.
  • Once the noodles are cooked, drain them and add them to the broth mixture, stirring gently to combine.
  • Ladle the ramen into bowls, making sure to distribute the vegetables evenly.
  • Garnish each bowl with half a boiled egg, chopped green onions, and a pinch of chili flakes for an added kick.
