Ingredients:

  • 1 cup of rice flour
  • 1/2 cup of coconut milk
  • 1/4 cup of water
  • 1 tsp of sugar
  • 1/2 tsp of salt
  • 2 large eggs
  • Oil for greasing the pan
  • Fresh coriander for garnish (optional)

Kitchen Tools Needed:

  • Non-stick frying pan
  • Ladle
  • Mixing bowl
  • Whisk

Instructions:

  • In a mixing bowl, combine the rice flour, coconut milk, water, sugar, and salt. Whisk until you have a smooth batter.
  • Heat a non-stick frying pan over medium heat and lightly grease it with oil.
  • Pour a ladleful of the batter into the hot pan, swirling it to form a thin layer that covers the base of the pan.
  • Cook for about 2 minutes until the edges start to lift and the base is golden brown.
  • Crack an egg into the center of the hopper and cover with a lid.
  • Cook for another 2-3 minutes until the egg is set but still slightly runny.
  • Using a spatula, carefully fold the edges of the hopper over the egg to form a cup shape.
  • Repeat the process with the remaining batter and eggs.
