Egg Hopper Delight

Ingredients:
- 1 cup of rice flour
- 1/2 cup of coconut milk
- 1/4 cup of water
- 1 tsp of sugar
- 1/2 tsp of salt
- 2 large eggs
- Oil for greasing the pan
- Fresh coriander for garnish (optional)

- Non-stick frying pan
- Ladle
- Mixing bowl

Instructions:
- In a mixing bowl, combine the rice flour, coconut milk, water, sugar, and salt. Whisk until you have a smooth batter.
- Heat a non-stick frying pan over medium heat and lightly grease it with oil.
- Pour a ladleful of the batter into the hot pan, swirling it to form a thin layer that covers the base of the pan.
- Cook for about 2 minutes until the edges start to lift and the base is golden brown.
- Crack an egg into the center of the hopper and cover with a lid.
- Cook for another 2-3 minutes until the egg is set but still slightly runny.
- Using a spatula, carefully fold the edges of the hopper over the egg to form a cup shape.
- Repeat the process with the remaining batter and eggs.
