Spicy Chicken Kottu Roti

Ingredients:
- 200g of cooked chicken, shredded
- 100g of roti, cut into small pieces
- 50g of cabbage, finely chopped
- 50g of carrots, grated
- 2 tablespoons of soy sauce
- 1 tablespoon of chili sauce
- 1 teaspoon of curry powder
- 1 tablespoon of vegetable oil
- 2 eggs, beaten
- Salt to taste
- Pepper to taste
- 2 spring onions, chopped

Instructions:
- Heat the vegetable oil in a wok over medium heat.
- Add the chopped cabbage and grated carrots, stirring for about 2-3 minutes until soft.
- Add the shredded chicken, roti pieces, soy sauce, chili sauce, and curry powder, and mix well.
- Push the mixture to one side of the wok and pour the beaten eggs into the cleared space, scrambling until fully cooked.
- Once the eggs are cooked, mix everything together thoroughly, ensuring the chicken and roti are well combined with the vegetables.
- Season with salt and pepper to taste.
- Garnish with chopped spring onions before serving.
