Ingredients:

  • 200g of cooked chicken, shredded
  • 100g of roti, cut into small pieces
  • 50g of cabbage, finely chopped
  • 50g of carrots, grated
  • 2 tablespoons of soy sauce
  • 1 tablespoon of chili sauce
  • 1 teaspoon of curry powder
  • 1 tablespoon of vegetable oil
  • 2 eggs, beaten
  • Salt to taste
  • Pepper to taste
  • 2 spring onions, chopped

Instructions:

  • Heat the vegetable oil in a wok over medium heat.
  • Add the chopped cabbage and grated carrots, stirring for about 2-3 minutes until soft.
  • Add the shredded chicken, roti pieces, soy sauce, chili sauce, and curry powder, and mix well.
  • Push the mixture to one side of the wok and pour the beaten eggs into the cleared space, scrambling until fully cooked.
  • Once the eggs are cooked, mix everything together thoroughly, ensuring the chicken and roti are well combined with the vegetables.
  • Season with salt and pepper to taste.
  • Garnish with chopped spring onions before serving.
