Ingredients:

  • 2 large tortillas
  • 200g of chicken breast, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 100g of shredded cheese (cheddar or mozzarella)
  • Sour cream for serving
  • Fresh cilantro for garnish

Kitchen Tools Needed:

  • Frying pan
  • Spatula

Instructions:

  • Heat olive oil in a frying pan over medium heat.
  • Add diced chicken breast and cook until golden brown, about 5-7 minutes.
  • Add chopped onion and minced garlic, sauté until onions are translucent.
  • Stir in sliced bell peppers, cumin, paprika, chili powder, salt, and pepper. Cook until peppers are tender, about 3-4 minutes.
  • Remove the chicken and vegetables from the pan and set aside.
  • In the same frying pan, warm the tortillas for about 1 minute on each side.
  • Layer the chicken and vegetable mixture on one half of each tortilla, sprinkle with shredded cheese, and fold the other half over to create a half-moon shape.
  • Cook the filled tortillas in the frying pan for an additional 2 minutes on each side, until the cheese has melted and the tortillas are golden and crisp.
  • Serve with sour cream and fresh cilantro on top.
